For example, I want to review all the accounts that have more than 1 active user. We have account_id and user_id properties on the events, but how do I filter out accounts that only have 1 active user_id.

Are you using the account add-on to instrument your accounts as groups?
If yes, then a cohort definition like this can help to identify orgs with 1 active user_id
