I have an event “visitedShop” . How can I build a chart to tracking how many users who have never visited the shop over time. Not just for that day, but overall.

There are couple of ways of doing this -
- If you have access to Cohorts, then you can use any of the following clauses to build your cohort and chart it

- You can also do it via an event segmentation chart as seen here.
You will have to adjust your time clauses accordingly.
